Wow…it’s been way too long since I’ve reached out to you. I hope you are all staying safe and healthy while we flatten the curve together.

There is something I’ve been doing a lot more of since the Stay Safe At Home order. I’ve been cooking. I made dinner last night for Mark and me (Aiden is a picky eater….he gets his own stuff). But, as I was poking around online, I stumbled across this recipe for a Butter-Baked Onion.

I will be the first to tell you that I HATE onion. I despise onion. Well, at least raw onion or cooked onion that’s still crunchy. It has to do with the flavor and the pungent burn of the raw onion. Raw onion and I do not have a good relationship, to the point that if it’s buried on a burger and I bite into it, I will gag.

Now, grilled, deep fried (onion rings, blooming onions), or caramelized onions are my favorite! This recipe for a Butter-Baked Onion popped up on one of my web-search windows and it stopped me from typing anymore. It’s from skillet.lifehacker.com. It looks so awesome!
