Marquette, MI – For a long time now I’ve known how awesome of a cook my wife is. But the other day she completely blew me away with a simple recipe idea to a food I’ve eaten hundreds of times – Mac-n-Cheese. Of course Peanut butter and Jelly sandwiches (pb&j) are in the running as one of the most classic American kid comfort foods… but Mac-n-Cheese takes the cake for me.
I’ve enjoyed it a ton of different ways: sticking to the recipe, powdered vs. liquid cheese, tuna-mac, even gourmet with truffle oil from a nice restaurant. I’ve had it when there’s no butter or milk in the house and only mixed the powdered cheese with water – eww.
But the new way… The only way to make Mac-n-Cheese in our house is now with Greek Yogurt. Oh Baby this is the bomb. It’s creamy, tangy, and so rich. Just sub yogurt for milk and you’re rocking (Keep the BUTTER of course). I like to melt in a little extra sharp cheddar and add lots of salt and pepper to top it all off.
